Ingredients
2 cups cornmeal
1 cup all-purpose flour
1/4 cup sugar
2 tablespoons baking powder
1 teaspoon salt
1 1/2 cups milk
1/4 cup vegetable oil
2 large eggs
1 cup sweet corn (canned or frozen)
Method
Preheat the oven to 200°C (400°F). Grease a baking dish.
In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
Whisk the milk, vegetable oil, and eggs in a separate bowl until mixed.
Pour the wet ingredients into the dry mixture. Stir until just combined.
Gently fold in sweet corn then pour the batter into the prepared baking dish.
