Mofongo Recipe
Ingredients
750 g green plantains
240 ml vegetable oil
1 tsp garlic
1 tsp salt
240 ml chicken broth
240 g cooked pork or crispy bacon
60 g fresh coriander
1 avocado
Lime wedges for serving
Method
Begin by peeling the plantains and cutting them into thick slices.
Heat the vegetable oil in a deep pan over medium heat. Fry the plantain slices for about 6 minutes, or until golden brown.
Remove the fried plantains and place them on a paper towel to drain excess oil.
In a large bowl, mash the fried plantains with garlic, salt, and half of the chicken broth. Stir in the pork or bacon until well combined.
Shape the mixture into a mound, serve with avocado slices, and sprinkle fresh coriander on top. Add lime wedges to enhance flavor.
