Ingredients
2 cups of cooked quinoa
1 can (400g) of black beans, drained and rinsed
1 cup of cherry tomatoes, halved
1 cup of corn, frozen or fresh
1 avocado, diced
1 lime, juiced
1 tablespoon of olive oil
1 teaspoon of cumin
Salt and pepper, to taste
Fresh coriander, chopped for garnish
Method
Start by cooking the quinoa according to package instructions.
In a large bowl, mix the cooked quinoa, black beans, cherry tomatoes, and corn.
Add the diced avocado, lime juice, olive oil, cumin, salt, and pepper.
Stir everything gently until combined.
Serve the salad topped with chopped coriander.
