Ingredients

– 200 g rice noodles
Method
1. Heat the vegetable oil in a large pot over medium heat.
2. Sauté the chopped onion, garlic, and grated ginger until soft and fragrant.
3. Stir in the curry paste and cook for a couple of minutes.
4. Pour in the coconut milk and vegetable broth. Bring the mixture to a simmer.
5. Add the mixed vegetables and rice noodles. Cook until the noodles are tender, about 5 minutes.
