Method
1. Heat olive oil in a large pan over medium-high heat.
2. Add garlic and ginger; sauté for about 30 seconds until fragrant.
3. Stir in mixed vegetables; cook for 3-4 minutes until they are tender.
4. Push veggies to the side, scramble the eggs in the empty space, then combine everything.
5. Mix in the cooked rice, soy sauce, and sesame oil. Season with salt and pepper to your liking.
