Ingredients
– 1 cup rice
– 2 cups pumpkin, diced
– 1 tablespoon ginger, grated
– 2 tablespoons soy sauce
– 1 tablespoon sesame oil
– 4 cups vegetable broth
– 1 cup water
– 1 teaspoon white pepper
– 2 green onions, chopped
– Salt, to taste
Method
1. Rinse the rice in cold water until the water runs clear.
2. Heat sesame oil in a pot over medium heat, then add the ginger and pumpkin. Cook until the pumpkin becomes tender.
3. Add the rinsed rice to the pot and stir for a minute. Pour in the vegetable broth and water.
4. Bring the mixture to a boil. Lower the heat, cover the pot, and let it simmer for about 20 minutes or until the rice is fully cooked.
5. Stir in soy sauce, white pepper, and green onions. Season with salt as needed.
