Ingredients
– 1 cup plain flour
– 2 tablespoons sugar
– 1 tablespoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 cup buttermilk
– 1 large egg
– 2 tablespoons melted butter
– 1 teaspoon vanilla extract
– Cooking spray or extra butter for frying
Method
1. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt together.
2. In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until well combined.
3. Pour the wet ingredients into the dry mixture. Stir gently until just combined. Some lumps are okay; don’t overmix.
4. Heat a non-stick frying pan or griddle over medium heat. Lightly coat it with cooking spray or butter.
5. Pour 1/4 cup batter onto the pan for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip each pancake and cook for another 1-2 minutes or until golden brown.
