Ingredients
- 2 cups of chopped zucchini
- 2 cups of diced bell peppers

- 8 small corn tortillas
- 1 avocado, sliced
- 1 cup of fresh cilantro
Method
- Preheat your oven to 200°C (400°F).
- Mix the zucchini, bell peppers, and red onion in a bowl.
- Add olive oil, cumin, paprika, and salt. Stir until veggies are well coated.
- Spread the vegetables on a baking tray and roast for 25-30 minutes.
- Warm the tortillas, then fill them with roasted veggies, avocado, and cilantro.
