Ingredients
– 1 cup quinoa
– 2 cups water
– 1 teaspoon salt
– 1 tablespoon olive oil
– 1 lemon (juiced)
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1/2 teaspoon black pepper
– 1/4 cup fresh parsley (chopped)
– 1/4 cup feta cheese (crumbled)
Method
1. Rinse the quinoa under cold water using a fine mesh strainer to remove any bitterness.
2. Combine the rinsed quinoa, water, and salt in a pot. Bring it to a boil over medium-high heat.
3. Reduce heat to low and cover. Let it simmer for about 15 minutes or until the liquid is absorbed.
4. Fluff the quinoa with a fork and add olive oil, lemon juice, garlic powder, onion powder, and black pepper.
5. Stir in parsley and feta cheese before serving.
