Ingredients
– 2 medium-sized beetroots, peeled and grated
– 1 cup coconut, grated
– 1 cup plain yogurt
– 1 teaspoon cumin seeds
– 1 green chili, chopped
– 10 curry leaves
– 2 tablespoons oil
– Salt to taste
– Water, as needed
Method
1. Heat oil in a pan over medium heat.
2. Add cumin seeds and let them sizzle for a few seconds.
3. Toss in the chopped green chili and curry leaves, cooking for another minute.
4. Combine grated beetroot in the pan, stirring well, and cook for 5 minutes.
5. Remove from heat, mix with yogurt and coconut, and season with salt.
