Ingredients
– 500g chicken breast, diced
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 400g diced tomatoes (canned)
– 1 teaspoon dried oregano
– 1 teaspoon paprika
– 250ml chicken broth
– 1 cup uncooked rice
– Fresh parsley, for garnish
Method
1. Heat the olive oil in a large pan over medium heat.
2. Add the onion and garlic, sauté until soft and fragrant.
3. Stir in the diced chicken and cook until it turns golden brown.
4. Pour in the diced tomatoes, oregano, paprika, and chicken broth. Bring to a simmer.
5. Add the rice, cover, and cook until the rice is tender and has absorbed liquid. Garnish with parsley before serving.
