Ingredients
– 4 cups vegetable broth
– 2 cups water
– 200 g ramen noodles
– 1 tablespoon soy sauce
– 1 tablespoon sesame oil
– 2 cups chopped bok choy
– 1 cup sliced mushrooms
– 1 tablespoon grated ginger
– 2 green onions, chopped
– 1 teaspoon chili flakes
Method
1. Pour vegetable broth and water into a large pot. Heat over medium until it starts to boil.
2. Add ramen noodles to the boiling broth and cook for about 4 minutes. Stir occasionally.
3. Mix in soy sauce, sesame oil, ginger, bok choy, and mushrooms. Let it all simmer for another 3 minutes.
4. Serve the ramen in bowls. Top each bowl with green onions and a sprinkle of chili flakes.
