Delicious Udupi Style Padipe Saasmi: Amaranth Leaves Curry Recipe

Ingredients

– 1 bunch amaranth leaves (about 250g)
– 1/2 cup grated coconut
– 1 tablespoon tamarind paste
– 1 teaspoon cumin seeds
– 1 teaspoon mustard seeds
– 1 tablespoon oil
– 1 onion, chopped
– 2 green chilies, slit
– 1/2 teaspoon turmeric powder
– Salt, to taste

Method

1. Begin by rinsing the amaranth leaves under cool water. Remove the stems and chop the leaves roughly.
2. Heat oil in a pan. Add mustard seeds and let them crackle. Toss in cumin seeds, onion, and green chilies. Cook until the onion turns light brown.
3. Stir in the chopped amaranth leaves, turmeric powder, and salt. Allow it to cook for about 5 minutes, stirring occasionally.
4. Mix grated coconut and tamarind paste into the pan. Combine everything well and cook for another 3 minutes.
5. Serve the curry hot with rice or flatbreads. Enjoy your dish!
