Ingredients
– 400g firm tofu
– 2 tablespoons olive oil
– 1 small onion, diced
– 1 red bell pepper, chopped
– 2 teaspoons garlic powder
– 1 teaspoon turmeric
– 1 teaspoon cumin
– 2 cups spinach, chopped
– Salt and pepper to taste
– Fresh herbs for garnish (optional)
Method
1. Crumble the tofu into small pieces using your hands or a fork.
2. Heat the olive oil in a large pan over medium heat. Add onion and bell pepper. Sauté for about 5 minutes until soft.
3. Stir in the crumbled tofu. Add garlic powder, turmeric, cumin, salt, and pepper. Mix everything well.
4. Cook for another 5 to 7 minutes, stirring occasionally. Add chopped spinach in the last minute of cooking.
5. Serve hot and top with fresh herbs if desired.
