Ingredients
– 1 medium Mangalore cucumber (also known as Australian blue pumpkin)
– 1 tablespoon oil
– 1 teaspoon mustard seeds
– 1 teaspoon urad dal (black gram split)
– 1 green chili, slit
– 1/2 teaspoon turmeric powder
– 1/2 cup coconut, grated
– 1 cup water
– Salt, to taste
– Fresh coriander, for garnishing
Method
1. Begin by peeling and chopping the Mangalore cucumber into cubes.
2. Heat oil in a pan over medium heat. Add mustard seeds and let them crackle.
3. Stir in urad dal and green chili, sautéing until the dal turns golden.
4. Add the chopped cucumber and turmeric powder. Pour in the water and season with salt. Cook until the cucumber is tender.
5. Mix in the grated coconut and cook for another 2-3 minutes. Garnish with fresh coriander before serving.
