Delicious Roasted Tomato Spinach Pasta With Multi-Millet Penne

Ingredients

– 2 cups penne pasta
– 3 cups cherry tomatoes
– 2 tablespoons olive oil
– 1 teaspoon garlic, minced
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 4 cups fresh spinach
– 1/2 cup grated cheese
– 1/4 teaspoon red chili flakes
– 1 tablespoon fresh basil, chopped

Method

1. Preheat your oven to 200°C (400°F). Spread the cherry tomatoes on a baking tray.
2. Drizzle olive oil over the tomatoes and sprinkle with garlic, salt, and pepper. Toss well. Roast for 25 minutes.
3. While the tomatoes are roasting, cook the penne pasta according to package instructions until al dente. Drain and set aside.
4. In a large pan, add fresh spinach over medium heat. Stir until wilted then mix in roasted tomatoes and the cooked pasta.
5. Sprinkle cheese, red chili flakes, and basil. Toss everything to combine and serve hot.
