Ingredients
- 1 whole chicken (about 1.5 kg)
- 1 cup cooked rice
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Method
- Preheat the oven to 190°C (375°F).
- In a pan, heat olive oil over medium heat. Sauté onion, bell pepper, and garlic until soft.
- Add cooked rice, spinach, oregano, salt, and black pepper to the pan. Mix everything well.
- Stuff the chicken with the rice mixture and place it in a roasting dish.
- Roast the chicken for about 1 hour, or until it’s cooked through and the juices run clear.
