Ingredients
– 1 cup unsalted butter, softened
– 1 cup sugar
– 1 large egg
– 2 teaspoons vanilla extract
– 2 cups all-purpose flour
– ½ cup cocoa powder
– ½ teaspoon baking powder
– ¼ teaspoon salt
– ½ cup raspberry jam
– Icing sugar for dusting
Method
1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Line baking trays with baking paper.
2. In a large bowl, cream the softened butter and sugar together until fluffy. Add the egg and vanilla extract. Mix well.
3. In another bowl, combine the flour, cocoa powder, baking powder, and salt. Gradually stir this mixture into the butter mixture until just combined.
4. Roll the dough into balls and then flatten them slightly. Place them on the prepared trays. Use a small round cutter to cut out a shape in the center of half the cookies.
5. Bake for about 10-12 minutes or until set. Let them cool on a wire rack. Spread raspberry jam on the solid cookies and top with the cut-out cookies. Dust with icing sugar if desired.
