– 2 cups of quinoa
– 4 cups of vegetable broth

– 1 can of black beans, drained and rinsed

Method

1. Rinse the quinoa under cold water. Combine quinoa and vegetable broth in a pot.
2. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for around 15 minutes until the quinoa is fluffy.
3. In a large bowl, mix the cooked quinoa with diced red bell pepper, corn, black beans, and avocado.
4. Drizzle olive oil and lime juice over the mixture. Sprinkle cumin and salt. Toss everything gently to combine.
