Ingredients

– 1 cup fine bulgur
– 1 cup warm water
– 1 large onion, finely chopped
– 2 tablespoons tomato paste
– 2 tablespoons red pepper paste
– 1 teaspoon cumin
– 1 teaspoon salt
– 1 teaspoon black pepper
– 2 tablespoons olive oil
– 1 cup parsley, finely chopped

Method

1. Place the bulgur in a large bowl and pour warm water over it. Stir lightly and let it sit for about 15 minutes to soften.
2. After the bulgur has absorbed the water, add chopped onion, tomato paste, red pepper paste, cumin, salt, and black pepper. Mix everything together well.
3. Drizzle olive oil into the mixture and continue to mix until all ingredients are combined thoroughly.
4. Finally, add the chopped parsley and mix once more, ensuring the parsley is evenly distributed.
5. Shape the mixture into small balls or patties. Serve chilled or at room temperature.
