Ingredients
– 4 quails
– 1 cup couscous
– 500 ml chicken stock
– 1 small onion, chopped
– 1/2 cup dried apricots, chopped
– 1/4 cup almonds, chopped
– 1 teaspoon ground cinnamon
– 2 tablespoons olive oil
– Salt and pepper to taste
– Fresh parsley, for garnish
Method
1. Preheat the oven to 200°C.
2. Heat olive oil in a pan over medium heat. Add the chopped onion and cook until soft.
3. Stir in the couscous, chicken stock, chopped apricots, almonds, ground cinnamon, salt, and pepper. Cook until liquid is absorbed.
4. Stuff each quail with the couscous mixture and place them in a baking dish.
5. Roast the quails in the oven for about 25-30 minutes until golden brown. Garnish with fresh parsley before serving.
