Ingredients

– 1 cup rice
– 4 cups water
– 1 cup pumpkin, diced
– 1 tablespoon ginger, minced
– 1 garlic clove, minced
– 2 tablespoons soy sauce
– 1 tablespoon sesame oil
– 1 green onion, chopped
– Salt to taste
– Pepper to taste

Method

1. Rinse the rice under cold water until the water runs clear.
2. In a large pot, combine the rinsed rice and water. Bring it to a boil over medium heat.
3. Once boiling, add the diced pumpkin, ginger, and garlic. Stir well.
4. Reduce the heat and let it simmer for about 20-25 minutes, or until the rice is cooked and the mixture is thickened.
5. Stir in the soy sauce, sesame oil, and season with salt and pepper. Top with chopped green onion before serving.
