Delicious Aratikaya Tomato Koora: Andhra-Style Plantain Recipe

Ingredients

– 2 medium green plantains
– 2 medium tomatoes, chopped
– 1 onion, finely chopped
– 2 green chilies, slit
– 2 tablespoons oil
– 1 teaspoon mustard seeds
– 1/2 teaspoon turmeric powder
– 1 teaspoon salt
– 1/2 cup water
– Fresh coriander leaves for garnish

Method

1. Peel the plantains and cut them into thin slices. Set aside.
2. Heat the oil in a pan on medium heat. Add mustard seeds and let them splutter.
3. Add the chopped onions and green chilies. Sauté until the onions are soft.
4. Stir in the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes become mushy.
5. Add the sliced plantains and water. Cover and cook for about 15 minutes or until the plantains are soft. Garnish with fresh coriander before serving.
