Ingredients

– 500 g penne pasta
– 200 g mushrooms, sliced
– 1 cup corn, canned or frozen
– 2 cloves garlic, minced
– 400 g tomato sauce
– 1 tsp Italian herbs
– 1 cup mozzarella cheese, shredded
– 1 cup ricotta cheese
– ¼ cup grated Parmesan cheese
– 1 tbsp olive oil

Method

1. Preheat the oven to 180 degrees Celsius.
2. Cook the penne pasta according to package instructions until al dente, then drain and set aside.
3. Heat olive oil in a pan over medium heat. Add garlic and mushrooms, cooking until the mushrooms are soft.
4. Stir in the corn, tomato sauce, and Italian herbs. Mix well and let it simmer for 5 minutes.
5. Combine the pasta, mushroom mixture, and cheeses in a baking dish. Bake for about 20 minutes, or until bubbly and golden.
