Ingredients
– 450 g shrimp, peeled and deveined
– 4 tablespoons olive oil
– 3 cloves garlic, minced
– 1/2 teaspoon red pepper flakes
– 1/2 cup white wine
– 1 lemon, juiced
– 1/4 cup fresh parsley, chopped
– Salt and pepper, to taste
– 320 g pasta, spaghetti or linguine
– Grated parmesan cheese, for serving
Method
1. Cook the pasta in a large pot of salted boiling water until al dente. Follow package instructions for timing.
2. While the pasta cooks, heat olive oil in a pan over medium heat. Add minced garlic and red pepper flakes, then sauté for about 30 seconds until fragrant.
3. Pour in the white wine and let it simmer for 2-3 minutes until slightly reduced.
4. Add the shrimp to the pan. Cook them until they turn pink, which will take about 3-5 minutes. Squeeze in the lemon juice, and season with salt and pepper.
5. Drain the pasta and combine it with the shrimp mixture. Toss in chopped parsley and serve with grated parmesan on top.
