Ingredients
– 2 cups dried pinto beans
– 1.25 litres water
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 1 jalapeño pepper, finely chopped
– 1 teaspoon ground cumin
– 1 teaspoon salt
– 1 can (400g) diced tomatoes
– Fresh coriander for garnish
Method
1. Start by rinsing the dried pinto beans in cold water.
2. Place beans in a large pot and add water. Bring to a boil, then reduce heat and let simmer for about 1 hour.
3. Stir in the chopped onion, minced garlic, diced red bell pepper, jalapeño, ground cumin, and salt.
4. Add the can of diced tomatoes to the pot. Cook the mixture for another 30 minutes until beans are tender.
5. Serve hot, garnished with fresh coriander.
