Ingredients
- 1 small watermelon (about 800 g), cubed
- 1 cup carrots, sliced
- 1 bell pepper, diced
- 1 tablespoon vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Fresh coriander leaves for garnish
Method
- Heat the vegetable oil in a large pan over medium heat.
- Add mustard seeds and cumin seeds, and wait until they start to sizzle.
- Stir in the sliced carrots and diced bell pepper, cooking for about 5 minutes.
- Mix in the watermelon cubes, turmeric powder, red chili powder, and salt. Cook gently for another 5 minutes.
- Garnish with fresh coriander leaves before serving.
