Ingredients
- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, chopped
- 1 cup of corn (frozen or fresh)
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper, to taste
Method
1. Rinse the quinoa under cold water until it runs clear.
2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then lower to a simmer and cover. Cook for about 15 minutes or until liquid is absorbed.
3. While the quinoa cooks, heat olive oil in a pan over medium heat. Add onion and garlic, cooking until they are soft and fragrant.
4. Stir in red bell pepper, corn, cumin, and paprika. Cook for around 5-7 minutes until everything is heated through.
5. Fluff the cooked quinoa with a fork and combine it with the vegetable mixture. Season with salt and pepper to taste.
