Ingredients
– 250g whole wheat pasta
– 1 cup spinach, chopped
– 1 cup corn, fresh or frozen
– 2 tablespoons olive oil
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 2 cups milk
– 2 tablespoons flour
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Method
1. Boil a large pot of water. Add the pasta and cook according to package instructions. Drain and set aside.
2. Heat olive oil in a skillet over medium heat. Sauté the onion until soft, then add garlic. Cook until fragrant.
3. Stir in the spinach and corn. Cook until the spinach wilts and the corn is heated through.
4. In a separate saucepan, whisk together the flour and milk. Cook over medium heat, stirring constantly, until the sauce thickens.
5. Add the pasta, vegetable mixture, salt, and black pepper to the sauce. Mix well and serve immediately.
