Delicious Roasted Colocasia Stir Fry With Ajwain Recipe

Ingredients

– 500 g colocasia (taro) roots, peeled and diced
– 2 tablespoons oil
– 1 teaspoon ajwain (carom seeds)
– 1 teaspoon cumin seeds
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– Salt to taste
– 2 tablespoons fresh coriander, chopped
– 1 tablespoon lemon juice

Method

1. Begin by boiling the diced colocasia in salted water until tender. This usually takes around 10-15 minutes.
2. Once cooked, drain the colocasia and set aside for a moment.
3. Heat oil in a frying pan over medium heat. Add ajwain and cumin seeds, allowing them to sizzle.
4. Stir in turmeric and red chili powder. Next, add the boiled colocasia, mixing well to combine all ingredients.
5. Cook for another 2-3 minutes. Finish by garnishing with chopped coriander and drizzling lemon juice on top.
