Method
1. Heat olive oil in a pan over medium heat. Add the diced onion and cook until it becomes soft.
2. Stir in the corn, tomatoes, cumin, and chili powder. Cook for about 5 minutes until heated through.
3. In a bowl, mix together the cooked red beans and rice.
4. Spoon the bean and rice mixture into bowls. Top with the vegetable mixture and avocado slices.
5. Garnish each bowl with fresh cilantro before serving.
