– 1 can (400g) diced tomatoes
– 1 tablespoon curry powder
– 1 teaspoon turmeric
– 1 tablespoon olive oil
– Salt and pepper to taste

Method

1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and sauté until soft, about 5 minutes.
3. Stir in the garlic and ginger, cooking for an additional minute.
4. Mix in the curry powder and turmeric, then pour in the coconut milk and diced tomatoes.
