Ingredients

– 500 g chicken breast, diced
– 1 cup broccoli florets
– 1 cup sliced carrots
– 1 bell pepper, chopped
– 2 cloves garlic, minced
– 2 tbsp soy sauce
– 1 tsp ginger, grated
– 1 tbsp olive oil
– 1 cup rice
– 2 cups water

Method

1. Start by heating olive oil in a large pan over medium heat.
2. Add chicken to the pan and cook until browned, about 5 minutes.
3. Stir in garlic, ginger, broccoli, carrots, and bell pepper. Cook for another 5 minutes.
4. Pour in soy sauce and mix well. Simmer for 3 minutes.
5. Meanwhile, rinse rice and boil water in a separate pot. Add rice, cover, and cook until tender, about 15 minutes.
