– 4 chicken breasts

Method
1. Begin by cutting the lemon in half. Squeeze the juice from one half into a bowl and save the other half for later.
2. Whisk together the olive oil, salt, pepper, and chopped herbs in the bowl with the lemon juice.
3. Place the chicken breasts in the mixture and let them marinate for at least 30 minutes.
4. Grill or pan-fry the chicken for about 6-7 minutes on each side, until fully cooked. Slice the chicken after removing it from heat.
5. Assemble the salad by mixing greens, tomatoes, cucumber, and feta in a large bowl. Add the chicken slices on top and drizzle with leftover lemon juice.
