Ingredients
– 2 cups fresh spinach, chopped
– 1 cup corn kernels
– 1 cup cheese, grated
– 4 large tortillas
– 1 tablespoon olive oil
– 1 teaspoon cumin powder
– Salt, to taste
– Pepper, to taste
– ½ teaspoon garlic powder
– 1 tablespoon sour cream, for serving
Method
1. Heat the olive oil in a non-stick pan over medium heat.
2. Add the chopped spinach and corn. Stir and cook for about 3-4 minutes until the spinach wilts.
3. Sprinkle cumin, garlic powder, salt, and pepper into the mixture. Cook for another 2 minutes.
4. Take a tortilla and spread some cheese on one half. Add the spinach and corn mixture on top of the cheese, then fold the tortilla over.
5. Cook each quesadilla in the same pan for about 2-3 minutes on each side until crispy and golden. Slice into wedges and serve with sour cream.
