Ingredients

– 2 medium zucchinis
– 1 tablespoon olive oil
– 1 tablespoon lemon juice
– 1 tablespoon fish sauce
– 1 tablespoon palm sugar
– 2-3 Thai red chilies (or to taste)
– 1 carrot, grated
– 2 green onions, sliced
– ¼ cup fresh coriander, chopped
– Salt to taste

Method

1. Start by washing the zucchinis. Then, cut them into thin matchsticks or slices.
2. Prepare the dressing by mixing the olive oil, lemon juice, fish sauce, palm sugar, and chopped chilies in a bowl. Stir until well combined.
3. Place the sliced zucchinis and grated carrot in a large bowl. Pour the dressing over the vegetables and toss everything together gently.
4. Add the sliced green onions and chopped coriander. Mix again, then taste and season with salt if needed.
