Ingredients
– 500 g arbi (or taro root)
– 2 tablespoons oil
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon coriander powder
– 1 teaspoon salt
– 2 tablespoons fresh coriander leaves (for garnish)
Method
1. Start by washing the arbi thoroughly and then boiling it in a pot of water for about 15 minutes until it’s tender.
2. Drain the water and let the arbi cool before peeling off the skin. Slice the peeled arbi into thin pieces.
3. Heat oil in a large frying pan over medium heat and add the mustard seeds. Wait for them to splutter before adding the cumin seeds.
4. Add the sliced arbi to the pan along with turmeric, red chili powder, coriander powder, and salt. Stir well until all the pieces are coated with the spices.
5. Cook for about 10 minutes, occasionally stirring until the arbi is golden brown. Garnish with chopped coriander leaves before serving.
