Ingredients

Method

1. Rinse the rice under cold water until it runs clear.
2. In a saucepan, heat olive oil over medium heat and add chopped onion and garlic. Sauté until soft.
3. Stir in the rice and cook for about 2 minutes, mixing well with the onion and garlic.
4. Add water, stock, salt, white pepper, and black pepper to the pot. Bring to a boil.
5. Cover, reduce heat, and let it simmer for 15 minutes. Add mixed vegetables, then uncover and let it sit for 5 more minutes before serving.
