Ingredients
– 2 cups spinach leaves
– 1 cup corn kernels
– 1 cup grated cheese
– 8 tortillas
– 1 tablespoon olive oil
– 1 teaspoon garlic powder
– 1 teaspoon cumin
– Salt, to taste
– Pepper, to taste
– Salsa, for serving
Method
1. Heat the olive oil in a large pan over medium heat.
2. Add the spinach and cook until wilted, about 2 minutes.
3. Stir in the corn, garlic powder, cumin, salt, and pepper. Cook for another 3 minutes until heated through.
4. Remove the mixture from the heat. Place some of it onto half of each tortilla, then sprinkle cheese on top.
5. Fold the tortillas in half and cook on a skillet for 2-3 minutes on each side until they are golden brown and the cheese has melted.
