Method
1. Heat oil in a large pan over medium heat.
2. Add mustard seeds and cumin seeds; stir until they start popping.
3. Sauté the chopped onion and green chilies until the onion becomes soft.
4. Mix in the diced carrot and the mixed vegetables; cook for 3 to 5 minutes.
5. Stir in the cooked rice, soy sauce, and coriander leaves; blend everything well and serve hot.
