Ingredients
– 500 g pork loin
– 100 g prosciutto
– 150 g mushrooms, chopped
– 1 onion, diced
– 2 cloves garlic, minced
– 1 teaspoon dried thyme
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 120 ml vegetable broth
– 60 ml olive oil
Method
1. Preheat the oven to 180°C (350°F).
2. Flatten the pork loin using a meat mallet until it is about 1 cm thick.
3. Sauté the onion, garlic, and mushrooms in olive oil until soft, then add thyme, salt, and pepper.
4. Lay the prosciutto over the pork, then spoon the mushroom mixture on top.
5. Roll the pork tightly, secure it with string, then place it in a baking dish. Pour vegetable broth over the pork and bake for 40 minutes.
