Ingredients
- 1.5 kg prime rib roast
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tbsp black pepper
- 1 tbsp garlic powder
- 1 tbsp rosemary, dried
- 500 ml beef broth
- 250 ml red wine
- 1 onion, diced
- 4 cloves garlic, minced
Method
1. Preheat the oven to 230°C.
2. Rub olive oil, salt, pepper, garlic powder, and rosemary all over the prime rib.
3. Place the roast in a roasting pan. Add beef broth, red wine, diced onion, and minced garlic around it.
4. Roast for 20 minutes at a high temperature, then lower to 160°C and continue cooking for another 1.5 hours or until desired doneness.
5. Remove from the oven, cover with foil, and let it rest for 15 minutes before slicing.
