Ingredients
– 250 g unsalted butter, softened
– 200 g sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 250 g all-purpose flour
– 100 g finely ground pistachios
– ½ teaspoon baking powder
– ¼ teaspoon salt
– 200 g pistachio butter
– Chopped pistachios for decoration
Method
1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
2. In a large bowl, cream the softened butter together with the sugar until smooth and fluffy.
3. Beat in the egg and vanilla extract until everything is well combined.
4. Mix the flour, ground pistachios, baking powder, and salt in another bowl. Gradually add this to the wet ingredients, stirring until a dough forms.
5. Scoop out small balls of dough and place them on the prepared tray. Flatten them slightly and bake for about 10-12 minutes until golden. Let cool completely and spread with pistachio butter. Top with chopped pistachios.
