Ingredients

– 1 cup of dried lentils
– 2 tablespoons of olive oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 bell pepper, sliced
– 2 cups of mixed vegetables (like broccoli, carrots, and peas)
– 3 tablespoons of soy sauce
– 1 teaspoon of ground ginger
– Salt and pepper to taste
– Fresh coriander for garnish

Method

1. Rinse the lentils under cold water and then cook them in a pot of boiling water for about 15 minutes or until tender.
2. While the lentils are cooking, heat olive oil in a large pan over medium heat.
3. Add the chopped onion and minced garlic to the pan and sauté until they become soft.
4. Stir in the bell pepper and mixed vegetables. Cook for another 5 minutes.
5. Once the lentils are ready, drain them and add to the pan along with soy sauce, ground ginger, salt, and pepper. Mix everything well and cook for a couple more minutes.
