Ingredients
– 2 cups of quinoa
– 4 cups of water
– 1 cup of cherry tomatoes, halved
– 1 cucumber, diced
– 1 bell pepper, diced
– 1/4 cup of red onion, finely chopped
– 1/4 cup of fresh parsley, chopped
– 1/4 cup of olive oil
– 3 tablespoons of lemon juice
– Salt and pepper to taste
Method
1. Rinse the quinoa under cold water to remove bitterness.
2. In a pot, combine quinoa and water. Bring it to a boil, then reduce the heat. Cover and simmer for 15 minutes or until the water has absorbed.
3. Once cooked, fluff the quinoa with a fork and let it cool.
4. In a large bowl, mix cooled quinoa with cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
5. Drizzle with olive oil and lemon juice. Season with salt and pepper, then mix well.
