Ingredients
– 1 cup quinoa
– 2 cups water
– 1 tablespoon olive oil
– 1 zucchini, chopped
– 1 bell pepper, chopped
– 1 cup cherry tomatoes, halved
– 1 can chickpeas, drained and rinsed
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– Salt and pepper to taste
Method
1. Begin by rinsing the quinoa in a fine mesh strainer.
2. Combine the quinoa and water in a saucepan and bring to a boil.
3. Reduce the heat, cover, and let it simmer for about 15 minutes.
4. While the quinoa cooks, heat olive oil in a large pan and add the zucchini and bell pepper. Sauté for 5-7 minutes.
5. After the quinoa is ready, mix it with the sautéed veggies, chickpeas, garlic powder, paprika, salt, and pepper.
