Ingredients
– 2 cups cooked rice
– 1 tablespoon vegetable oil
– 2 cloves garlic, minced
– 1 cup mixed vegetables (fresh or frozen)
– 2 tablespoons soy sauce
– 2 eggs
– 1/2 teaspoon salt
– 1/4 teaspoon pepper
– 1 onion, chopped
– 2 green onions, sliced
Method
1. Heat the vegetable oil in a large pan over medium heat.
2. Add chopped onion and minced garlic. Sauté until the onion is soft.
3. Stir in the mixed vegetables and cook for about 3 minutes.
4. Push the veggies to one side of the pan. Crack eggs into the empty side and scramble them until fully cooked.
5. Combine everything in the pan. Add cooked rice, soy sauce, salt, and pepper. Stir well until heated through.
