High-Protein Refried Beans Quesadilla Recipe For Healthy Meals

Ingredients

  • 1 can (400g) refried beans
  • 1 cup shredded cheese
  • 4 large tortillas
  • 1 teaspoon olive oil
  • 1 teaspoon taco seasoning
  • 1 cup diced vegetables (like bell peppers, onions, and corn)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Sour cream for serving

Method

  1. Heat the olive oil in a pan over medium heat. Add the diced vegetables and sauté until they are soft.
  2. Mix in the refried beans, taco seasoning, garlic powder, salt, and pepper. Stir everything together until warm.
  3. On one side of each tortilla, spread a layer of the bean mixture. Sprinkle cheese on top.
  4. Fold the tortillas in half and cook them in the same pan until they are golden brown on both sides.
  5. Serve the quesadillas with sour cream on the side.
