Ingredients
– 200 g beansprouts
– 1 raw mango, peeled and julienned
– 1 carrot, julienned
– 2 tablespoons lime juice
– 2 tablespoons fish sauce
– 1 tablespoon palm sugar (or brown sugar)
– 2 red chillies, sliced
– 1/4 cup fresh coriander, chopped
– Salt to taste
– 1/4 cup roasted peanuts, crushed
Method
1. Start by preparing all the vegetables. Julienne the mango and carrot, then set them aside.
2. In a large bowl, combine the beansprouts, mango, carrot, and sliced chillies.
3. Next, in a small bowl, mix lime juice, fish sauce, and palm sugar until the sugar dissolves.
4. Pour the dressing over the salad and toss everything gently to coat well.
5. Finally, sprinkle crushed peanuts and chopped coriander on top before serving.
