Ingredients
– 2 cups of cooked chicken, shredded
– 1 cup of diced bell peppers
– 1 cup of corn
– 1 cup of black beans, rinsed and drained
– 1 cup of salsa
– 1 teaspoon of cumin
– 2 cups of grated cheese
– 4 large flour tortillas
– 1 tablespoon of olive oil
– Fresh cilantro for garnish (optional)
Method
1. Preheat your oven to 190 degrees Celsius.
2. In a large bowl, mix together the chicken, bell peppers, corn, beans, salsa, and cumin.
3. Lay the tortillas flat and divide the chicken mixture evenly among them.
4. Sprinkle grated cheese on top of the filling before folding the tortillas.
5. Heat the olive oil in a frying pan. Toast each tortilla wrap for 2-3 minutes on each side until crispy. Garnish with fresh cilantro if desired.
